One questions, if i want connect multiple switch with my GNS3, i need for each switch one NIC?
Or exist another way do this?

I would assume you are looking to hook physical switches to Dynamips/GNS3.
You can do a NIC per GNS router interface or you can do a trunk with a bunch of vlans on a single physical NIC that goes to a layer 2 breakout switch.
Both ways work fine. The advantage of the breakout switch is you can have a ton of interfaces without playing around with a bunch of physical ports.
