In order to get reversible nat to work, to work I had to remove the "match interface Serial0/1" from the route-map. According to the configuration guide, a route-map has to match on an ip access-list.

Matching on interfaces is not supported. it is listed as a restriction on the Config guide:
I configured it without at first then mixed up the inside and outside r-map and pool reconfigured everything with the match int, it still didn't work and remembered that mat int is not supported, removed it and finally it worked.
Removing the "match interface Serial0/1/0" under the route-map CREATE_EXTENDABLE_ENTRIES worked like a charm.

•Only IP hosts that are part of the routemap configuration will allow outside sessions.
•Outside-to-inside support is not available with Port Address Translation (PAT).
•Outside sessions must use an access list.
•Access lists with reversible routemaps must be configured to match the inside-to-outside traffic.
•Match-interface or Match Next-hop is not supported for reversible routemaps.
